    Edamame Hummus

    Ingredients:
    • 1 cup frozen shelled edamame
    • 3 tbsp water
    • 2 tbsp pomegranate seeds
    • 1 tbsp tahini
    • 1 tbsp fresh lemon juice
    • 1 tbsp olive oil
    • 2 tsp finely chopped parsley
    • 1 tsp garlic, finely chopped
    • ¼ tsp salt
    Directions:
    1. Boil frozen edamame 4-6 minutes.
    2. Drain and combine all ingredients in a food processor.
    3. Add more olive oil if needed.
    4. Place into a bowl (or a large martini glass) and serve with veggies or pita chips.
